The cuisine in Assam is actually a unique mixture of northern India indigenous styles. Although regional variations and external influence can be easily detected, you will find the food delicious and tasty.

The flavors are used a great extent and as compared to other cuisine, Assamese use less spices.

Fresh as well as Dried fruits with a pickle mix are widely used to add a bit of tangy flavor to the meal while making it very healthy.

Fish is the staple food along with rice, commonly known as bhat. Besides fish, birds like pigeon and duck are also favorites among the people of Assam. Among the special dishes Pork dishes are the ones that are preferred the most when it comes to festival celebration.

Traditionally every Assamese meal is started with Khar while the last dessert that succeeds the meal is tenga, which is not sweet but sour. The festive meal is served in special utensils that are made by a community called Mariya. Pan or the beetle nut is served to all after the meal is concluded.

You may find rice dominating the dishes of Assam as the most commonly served breakfast here is chira along with jaggery and yogurt. Drying and fermentation is a common method of food preparation unlike the typical bhuna or frying in the other north Indian cuisines. You can ask for roasted rice also if you are not very experimental about food and choose to stick to your own. The restaurants in Assam are equipped, and are there to take care of your food as well as travel.
