In its short
span of its existence this newly formed state of India has been able to
crave an identity of itself. Chhattisgarh cuisine although imbibes
certain elements from its neighboring states.
It has
succeeded in retaining its own identity. The people of Chhattisgarh are
very hospitable go out of their way to make their guest comfortable.
People here are especially fond of namkeens and sweets. It is an
inevitable addition of its cuisine. Maize, Jowar, and Wheat are
important food of the people here.
Protein rich
food is a part and parcel of Chhattisgarh cuisine. Lentil and pulses,
especially arhar dal is common feature of Chhattisgarh cuisine. Dal is
prepared with a mixture of green vegetables like ladyfinger and cabbage
as well as brinjal, pumpkin etc.

People of
Chhattisgarh have a sweet tooth, so now prizes for guessing why jalebis
are so popular. Bafuari, prepared from chana dal is also a popular
preparation of this region.
Kusli, cashew burfi, jalebi, lavang lata, khurma, sabudana ki khichadi,
shikanji and moong dal ka halwa are favorite among the locals. Tikhur
barfi which is easily available and abundantly grown here is the most
loved dish of this region. This barfi has medicinal properties and is
supposed to increase our immunity level. Minjhra bedi prepared from
Lauki, Papita, rakhia, urad dal and kumhda taste heavenly.
Plenty of flavors, spices and aroma are used in local dishes. Oil,
cream, butter and ghee are a necessity in their dishes. Rotis, bread
and rice relished by most of them. People are extremely fond of
non-vegetarian food. The tribes in particular savor chicken, beef,
mutton and eggs. A stimulant, sattu; and Littior and Choka, a kind of
fast food are regularly eaten by the tribal communities of this region.
Chutneys and pickles form an essential ingredient of Chhattisgarh
cuisine. The cuisine of every area is a representative of the people
living in that area. People from some parts of India prefer spicy food.
One part may prefer sweets over every other kind of food. Also, in some
parts of India sea food is preferred while others may only eat
vegetables.
Like the rest of
India, Chhattisgarh also has many peculiar dishes which are considered
to be a part of the culture of Chhattisgarh. The cuisine in
Chhattisgarh is special and is known for its taste. The state has
developed a lot in every aspect, and its cuisine is as rich as its
cultural traditions.
