Cuisine is an important part of each and every culture in the world. Every culture and each civilization requires a cuisine as there would be culture existing without any food to feed them on.

This proves the importance of cuisine in every culture. India is land that houses various cultures, traditions and in short diversified people together.

However, the cuisine always remains different as it is based on a region’s climate, preferences of the people, tradition and many such factors. It is always fun to gorge oneself upon different cuisine.

It is a unique experience and gives the eaters a chance to confront different tastes, spices and sometimes such random experiments can prove to be beneficial.

Traditional Cuisine

Jammu and Kashmir is a state in India that has a cuisine quite different from the other types of cuisine. The traditional cuisine is called as Wazwan. Its history is very old and dates all the way back to the 14th century. The Mongol ruler Tamurlane or Timur the lame invaded India in the year during the year 1348.

Due to this invasion, several trained weavers, architects, woodcarvers, cooks and calligraphers from the city of Samarkhand arrived at Kashmir. Wazas are the descendants of the immigrated cooks. Just like Kashmir’s history, the native cuisine of Kashmir has stood unchallenged and is also one of India’s most famous cuisines. The royal Kashmir cuisine is an influence of Afghan, Iranian and Central Asian styles.

Non Vegetarian Dishes

In Jammu and Kashmir people prefer non-vegetarian food every alternate day. Their feat is very grand with 36 course meal consisting of 30 non-veg dishes. These dishes are cooked by Wazas, the great chefs. The principal item served is rista, the meat balls made by finely smashing and cooking. In fried varieties Tabak Maz and Seekh kababs are liked. Other non vegetarian dishes are Roganjosh, Gushtaba and Yakhni. The Ladakh area resemble the Tibet cuisine and prefer having rice, millet, yak butter, wheat and various other dairy products associated with fruits and vegetables.

Vegetarian Cuisine

Vegetarian dishes are very few and the most popular vegetarian dish is Dum Aloo. Formerly, a vegetarian had a tough time to get food, but now keeping up to hospitality, the state has initiated with many restaurants that offer vegetarian dishes to their tourists. Fireen is a sweet dish and enjoying snacks such as Sheermal, Bagerkhani and Tsot are various forms of breads. The tremendous offers of cuisine are hard to locate anywhere else and so once in a life at least everyone should visit this beautiful land and savor the taste.
