INTRODUCTION:

Food habits of Bihar show how the cuisines of the states have evolved over the centuries.

People are largely vegetarian though some are fond of chicken and meat dishes.

Wheat and rice are the stable food of Jharkhand. Vegetables are grown in abundance and are also cooked in a variety.

A regular Bihari meal consists of dal bhat, phulka, tarkari and aachar.

But as the season changes there is also change in the Bihari Thali. Mainly mustard oil is used for cooking.

Recipes of Jharkhand:
Some of the special recipes of Jharkhand are mentioned as under:

Mitha Khaja: It is a dish which is made with the help of maida, jaggery, cardamom powder, water and with ghee. This is a dish which is eaten when is completely cooled and after preparing the khaja it is kept in the container.
Bean Gatte ki Sabzi: This is a dish which is made with the help of besan. Gravy is than made to the sabzi after making besan gatta. This is served with rice, chapatti or plain paratha. It is a delicious recipe that is popularly eaten in other states of the country also.
Aloo Chokha: This is a dish which is made with the help of potatoes. Chokha means no water so it should be made without water. This is a delicious dish that is made of potatoes.
Thekua: It is popularly known as Khajoor. It is a popular home made dish. It is sweet and crispy prepared from wheat flour, chopped coconut and sugar. It is an ideal dessert carrying out during the journeys as it can be stored for few days. It is served when is completely cooled.
Chana Dal ki Kachree: It is the kachree which is prepared with the help of chana dal. The gravy is prepared in the kachree and is served with chapatti, rice or plain paratha or it is served with tamarind chutney.
Sabzi Jingni Nenua with chana: It is an East Indian recipe and is very much popular in Bihar and Jharkhand. It is enriched with nutrition of chana and subzi jingni is also very nutritious.
Pua and Singal: It is prepared with suzi, curd, sounf and oil. It is prepared while mixing the entire things one together and is served as it is made. It is prepared while it doesn’t become light brown. It is also a very delicious dish to eat and also very easy to prepare.
